Pasta with Green Beans and Almonds

INGREDIENTS:
• 1/2 cup sliced or garlic sliced almonds
• 2 medium onions, sliced
• 2 cloves garlic, pressed
• 2 tablespoons water
• 1/2 pound fresh green beans, cut in 2-inch pieces
• 1 can (14.5 ounces) diced tomatoes with juice
• 1/4 cup fresh parsley, chopped
• 3/4 pound whole wheat pasta, prepared according to package instructions
• Freshly ground pepper, to taste

PREPARATION:
Place almonds on baking sheet. Toast in oven at 300 degrees for 3 minutes or until lightly browned. Set aside.

In skillet, over medium heat, saute onion and garlic in water for 3 to 4 minutes. Add beans; cook 3 minutes.
Add tomatoes; stir to blend. Add parsley and cook for 1 or 2 minutes longer or until heated through.
Combine vegetables and cooked pasta; toss. Sprinkle with toasted almonds and freshly ground pepper.
Makes 4 servings.
